Spring Rolls need no introduction.
It is one of the most popular fried snack/starter that my children love to order when eating out. Usually, a lot of shredded cabbage is used as a filling for the spring rolls. But I do not stick to only cabbage and try different vegetable fillings. They turn out super tasty.
One such super tasty spring roll recipe that I make is the Tofu Carrot Spring Roll. I am delighted to share the recipe with all of you.
As with many of my recipes, this recipe is also easy to prepare and has a long shelf life. You can prepare the filling and shape the spring rolls in advance and store them in the refrigerator (in the freezer compartment) for weeks. They stay good even up to a month. You can remove them from the freezer just before you fry them and consume hot.
It is a great party snack, lunch box snack or a tea time accompaniment.
Tofu Carrot Spring Rolls by Masterchefmom
Preparation time : 10 minutes
Cooking time : 30 minutes
1 cup = 250 ml cup
Makes : approx. 20 spring rolls
Ingredients :
For the filling:
2 tsp sesame oil
2-3 garlic cloves (finely chopped)
1/2” ginger (grated)
2 green chillies(finely chopped)
1 onions (thinly sliced)
1 carrot (peeled and grated)
150 gm tofu (crumbled)
handful of coriander leaves or spring onion leaves for garnish ( add as per taste)
salt to taste
Other Ingredients:
15-20 spring roll sheets (store-bought)
oil for frying
1 tsp flour (mixed along with 2.5 tsp water to get a paste like consistency)
Method:
- To make the filling, heat a wide pan with oil .
- Add the green chillies, ginger, garlic and fry them for a few seconds.
- Now add the onions and mix well. Let the onions turn light pink.
- Add the grated carrot, crumbled tofu, salt and mix well.
- Cook for a few minutes till all the extra moisture is absorbed.
- Garnish and switch off the gas.
- Take the spring roll sheet( square shape) and spoon the filling into one corner . Do watch the video to see how to fold the spring roll.
- Fold and roll the sheet and seal it using the flour-water mixture.
- Repeat the process for the remaining filling.
- Heat oil and deep fry the spring rolls till they are uniformly golden on all sides.
Your delicious Tofu Carrot Spring Rolls are now ready to be served with your favourite sauce or chutney.
