While we as adults like vegetable salads and sprouts, it is difficult to get children to eat them. Children usually find them boring.
So, what I do is create innovative recipe with lot of vegetables and sprouts, but present in a way that kids love them. Well, one such recipe is the "Salad Rolls" or the "Rice Paper Rolls". It is a simple yet delicious salad meal that can be put together within 10-15 minutes. You can use vegetables that are available at home. This is also a good way to introduce sprouts to children.
The rice paper rolls can be a snack, a lunch box dish and also a dinner idea. You can serve the salad rolls along with any store bought sauce of your choice or pair it with a simple peanut dipping sauce mixing peanut butter, light soya sauce, chilli sauce, honey and lemon juice.
It is also fun to put together all the ingredients. As this is a 'no-cook' recipe, you can even involve your children to make these rolls.
Salad Rolls By Masterchefmom
Total Time :15 minutes
Serves: 2
1 cup =250 ml cup
NOTE: You can use vegetables and sprouts of your choice. You can use all or few vegetables mentioned below.
Ingredients:
5-6 rice paper sheets
1/2 cup green gram sprouts
1 carrot ( peeled, julienned or thinly sliced)
1/2 green bell pepper ( julienned)
1/2 red bell pepper (julienned)
1/2 yellow bell pepper ( julienned)
1/4 zucchini (julienned)
1-2 lettuce leaf( remove the thick stem and tear the leaf into half)
5-6 basil leaves
10 mint leaves
black or white pepper ( optional, use the pepper shaker)
salt to taste
Method:
1. Dip the rice paper in water for 10 seconds, remove and place it over a clean and dry working board.
2. Place the lettuce leaf on one end of the rice paper, and arrange the julienned vegetables , sprouts, herbs , fold and roll the rice paper just like the way you would wrap a burrito/roll.
3. Repeat this process for all the remaining rice papers.
Your super quick, simple, colourful and wholesome salad rolls are now ready . You can serve them with sauces of your choice. They are a healthy snack too.
